This month we have an ultra light 248 degree trigonelline alkaloid roast. Trigonelline is the other alkaloid found naturall in offee which is different from caffeine. It normally occurs in 1% concentrations in the raw bean is roasted away by 356 degrees leaving only trace amounts. At 248 this will not taste like coffee and only the adventurous should try. We are using Hawaiian coffee for this experiment.

We are the oldest certified organic coffee farm in the United States. This is trigonelline coffee ultralight special roast. And you'll be able to taste the difference. These coffee beans were harvested just months ago and are still green with freshness and aroma. This will taste unlike most of the coffees you are used to trying, since the green beans are only months old, and haven't been shipped around the world to roasteries -- we roast our beans where we grow them! We roast the coffee twice a week to order so your coffee is never older than a week when it arrives. Hawaiian grade coffee is coffee that was too small or not quite in the region to be called Kona coffee. However it is still coffee grown in Hawaii and roasted at our farm right in Kona! The flavor of the coffee is far richer than coffee grown in most regions of the world because of our active volcano which gives us the "vog" nutrients and rain to replenish the soil. This makes our coffee some of the most flavorful in the world, as very few coffee plantations can be set up next to constantly erupting volcanoes. This coffee is freshly roasted in small batches, on our vintage Sivetz roaster. The average age of the batch is 3-7 days old at most! So you get some really fresh coffee that is not comparable to store bought coffee.
